1 tbsp sugar-free cheesecake instant pudding mix (for that rich cheesecake texture)
1/2 tsp vanilla extract
Berry Layer & Toppings:
1/2 cup fresh strawberries, sliced
2 tbsp freeze-dried strawberries, crushed (for extra berry crunch)
Optional: 1 crushed low-carb cookie or graham cracker
Instructions
1. Mix Cheesecake Base: In a large mixing bowl, whisk together the Greek yogurt (or blended cottage cheese), protein powder, sugar-free cheesecake pudding mix, and vanilla extract until completely smooth and thick.
2. Fold in Whipped Topping: Gently fold in half to three-quarters of the thawed whipped topping until light, fluffy, and swirled with cookie flecks.
3. Assemble & Top: Transfer the fluff directly back into the whipped topping tub or a serving bowl. Top generously with fresh sliced strawberries and crushed freeze-dried strawberries.
4. Chill & Enjoy: Freeze for 10–15 minutes (or refrigerate for 20 minutes) for a firm, ice-cream-like cheesecake consistency!
