Classic Southern Hummingbird Sheet Cake

Ingredients

Cake Batter:

 3 cups all-purpose flour

 2 cups granulated sugar

 1 tsp baking soda

 1 tsp ground cinnamon

 1/2 tsp salt

 3 large eggs, room temperature

 1 cup vegetable oil

 1 1/2 tsp vanilla extract

 1 can (8 oz) crushed pineapple in juice, un-drained

 2 cups ripe bananas, mashed (about 3 medium)

 1 cup pecans, chopped (divided)

Cream Cheese Frosting:

 1 package (8 oz) cream cheese, softened

 1/2 cup (1 stick) unsalted butter, softened

 4 cups powdered sugar

 1 tsp vanilla extract

Instructions

1. Preheat & Prepare: Preheat oven to 350°F (175°C). Grease and flour a 10×15-inch jelly-roll sheet pan or a 9×13-inch baking pan.

2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.

3. Combine Wet Ingredients & Batter: Add the eggs and vegetable oil, stirring until combined (do not beat). Fold in the vanilla, crushed pineapple with its juice, mashed bananas, and 1/2 cup of chopped pecans until just incorporated.

4. Bake: Spread batter evenly into the prepared pan. Bake for 25–30 minutes (30–35 mins for a 9×13 pan) or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.

5. Frost & Garnish: Beat the softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until light and fluffy. Spread evenly over the cooled cake and sprinkle with the remaining 1/2 cup of chopped pecans!
