Anti-Inflammatory Highlights

Spinach: Packed with vitamins A, C, and K alongside potent antioxidants like lutein and kaempferol that help combat oxidative stress and support overall cellular health.

Mushrooms: Deliver natural anti-inflammatory compounds, B vitamins, and immune-supporting beta-glucans while adding rich umami flavor.

Ingredients

 4 tortillas (8-inch)

 1 cup shredded mozzarella

 1 cup shredded cheddar

 3 cups roughly chopped spinach

 8 ounces sliced mushrooms

Olive oil (optional, enough to lightly coat the tortillas)

Salt and black pepper, to taste

Instructions

1. Prep the Oven & Pan: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.

2. Sauté the Veggies: In a large skillet over medium-high heat, cook the sliced mushrooms with a pinch of salt and pepper for 5 to 6 minutes until browned and any excess liquid has evaporated. Add the roughly chopped spinach and stir for 1 to 2 minutes until just wilted. Remove from heat.

3. Assemble the Quesadillas: Lay the 4 tortillas flat on the prepared baking sheet. Sprinkle half of the mozzarella and cheddar cheeses onto one half of each tortilla. Top evenly with the sautéed spinach and mushroom mixture, followed by the remaining cheese.

4. Fold & Brush: Fold the empty half of each tortilla over the filling to create a half-moon shape, pressing down gently. Lightly brush or spray the tops of the tortillas with olive oil for extra golden crispiness.

5. Bake to Crispy: Bake in the preheated oven for 10 to 12 minutes, flipping halfway through if desired, until the tortillas are golden brown and crispy and the cheese is completely melted and bubbling.

6. Slice & Serve: Let cool for 2 minutes, slice into wedges, and serve warm with your favorite salsa, guacamole, or Greek yogurt!
