Anti-Inflammatory Highlights
Eggs: Packed with bioavailable protein, healthy fats, and choline to support metabolic health and brain function.
Smoked Paprika & Mustard: Contain natural antioxidant compounds that add vibrant flavor while helping combat cellular stress.
Ingredients
6 large eggs
3 tbsp mayonnaise or Greek yogurt
1 tsp Dijon mustard or yellow mustard
1 tsp apple cider vinegar or lemon juice
Salt and black pepper, to taste
Smoked paprika, for dusting
Chopped fresh chives or dill (optional, for topping)
Instructions
1. Boil the Eggs: Place the large eggs in a saucepan and cover with cold water. Bring to a rolling boil, then remove from heat, cover, and let sit for 10–12 minutes. Transfer immediately to an ice water bath to cool completely before peeling.
2. Halve & Separate: Peel the cooled eggs, cut them in half lengthwise, and gently pop the yolks out into a mixing bowl, placing the empty egg white halves onto a serving tray.
3. Mash the Yolks: Mash the yolks thoroughly with a fork until smooth. Stir in the mayonnaise (or Greek yogurt), Dijon mustard, apple cider vinegar, salt, and black pepper until completely creamy and well combined.
4. Fill & Garnish: Spoon or pipe the creamy yolk mixture back into the egg white halves. Dust generously with smoked paprika and top with fresh chives or dill if desired. Chill before serving—if they last that long!
