Anti-Inflammatory Highlights

Canned Salmon: Exceptionally rich in omega-3 fatty acids, which help reduce systemic inflammation and support cardiovascular health.

Eggs: Provide clean, bioavailable protein and essential micronutrients.

Almond Flour / Binder: Offers a nutrient-dense, gluten-free alternative to traditional breadcrumbs, keeping the glycemic load low.

Ingredients

2 cans (approx. 6 oz each) pink salmon or red salmon, drained and flaked

 2 large eggs, lightly beaten

1/2 cup fine almond flour (or seasoned breadcrumbs)

1 tbsp olive oil or avocado oil (for pan-frying)

Salt and black pepper, to taste

Optional: A squeeze of fresh lemon juice and chopped fresh herbs

Instructions

1. Prep the Salmon: Drain the canned salmon thoroughly and place it into a medium mixing bowl. Remove any large bones or skin if desired, then flake the salmon with a fork.

2. Combine Ingredients: Add the beaten eggs, almond flour (or breadcrumbs), salt, pepper, and herbs to the flaked salmon. Mix thoroughly until the mixture holds together when pressed.

3. Form Patties: Divide the mixture and shape it firmly into 4 to 6 equal-sized patties, pressing them compactly so they don’t fall apart during cooking.

4. Pan-Fry: Heat the olive oil or avocado oil in a skillet over medium heat. Place the salmon patties into the pan and cook for 4–5 minutes per side, until golden brown and crispy.

5. Serve: Remove from the skillet, let cool slightly, and serve warm with a squeeze of fresh lemon juice or your favorite healthy dipping sauce!
