2 cups low-fat cottage cheese
4 large eggs
1 scoop (approx. 30g) vanilla or unflavored protein powder (or 3 tbsp coconut flour/cornstarch)
Optional for sweetness: 1-2 tbsp honey, maple syrup, or a pinch of your favorite sweetener
Instructions
1. Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch glass baking dish with cooking spray or a touch of butter.
2. Blend Until Smooth: Place the cottage cheese, whole eggs, protein powder (or flour/cornstarch), and optional sweetener into a high-speed blender. Blend on high for 45 to 60 seconds until the mixture is completely smooth, creamy, and aerated with tiny bubbles.
3. Bake: Pour the smooth batter into your prepared glass dish. Bake in the preheated oven for 35 to 40 minutes.
4. Watch it Rise: During the last 10 minutes, the bake will puff up beautifully into a dramatic, golden-brown soufflé.
5. Cool and Serve: Remove from the oven. It will deflate slightly as it cools, which is perfectly normal. Let it rest for 5 minutes before slicing into warm, pillowy squares.
