Ingredients

 1.5 lbs small yellow or red potatoes, cut into thick rounds or wedges

 2 tbsp olive oil (or melted butter)

 3 cloves garlic, finely minced

 ½ cup grated Parmesan cheese

 1 tsp paprika

 1 tsp Italian seasoning (or dried oregano/thyme)

 ½ tsp sea salt (or to taste)

 ¼ tsp freshly cracked black pepper

 2 tbsp fresh parsley, finely chopped (for garnish)

Instructions

1. Prep the Potatoes: Thoroughly wash and dry the potatoes. Slice them into thick, uniform rounds (about ½-inch thick) to ensure they cook evenly.

2. Soak for Ultimate Crispiness (Optional): For maximum crunch, soak the potato slices in a bowl of cold water for 15 minutes to remove excess starch. Drain and pat them completely dry with a clean kitchen towel.
