Chicken Spinach and Mushroom Low Carb Oven Dish

Ingredients

 6 thin-sliced chicken breasts

 1 small bag fresh baby spinach (approx. 5-6 oz)

 8 oz fresh mushrooms, sliced

 8 oz shredded mozzarella cheese

 1 tbsp olive oil (for sautéing)

 1 dash Herb and Garlic Seasoning

 1 dash black pepper (plus salt to taste)

Instructions

1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease an 8×11-inch or 9×13-inch baking dish.

2. Sear and Season the Chicken: Heat the olive oil in a large skillet over medium-high heat. Season both sides of the thin-sliced chicken breasts with the Herb and Garlic Seasoning, black pepper, and a pinch of salt. Sear the chicken in the skillet for about 3 to 4 minutes per side until golden and cooked through. Transfer the cooked chicken to the bottom of your prepared baking dish.

3. Sauté the Mushrooms and Spinach: In the same skillet, add the sliced mushrooms. Sauté for 4 to 5 minutes until they release their moisture and turn golden brown. Toss in the fresh baby spinach and stir-fry for 1 to 2 minutes just until the spinach is wilted.

4. Layer the Casserole: Spread the sautéed mushrooms and wilted spinach evenly over the chicken breasts in the baking dish.

5. Top with Cheese: Cover the vegetable and chicken layers with a generous blanket of the shredded mozzarella cheese.

6. Bake: Place in the preheated oven and bake for 15 to 20 minutes, or until the cheese is completely melted, bubbly, and lightly browned on top. Serve hot.
