For serving: 1/2 cup sugar-free marinara sauce
Instructions
1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Generously grease a standard bundt pan with non-stick cooking spray or melted butter.
2. Make the Keto Dough: In a microwave-safe bowl, combine 1.5 cups of the shredded mozzarella and the cream cheese. Microwave in 30-second intervals until completely melted. Stir in the eggs, almond flour, baking powder, garlic powder, Italian seasoning, and a pinch of salt. Mix thoroughly until a pliable dough forms.
3. Shape the Dough: Pinch off pieces of the dough and roll them into small, bite-sized balls (about 1 inch in diameter).
4. Assemble the Ring: In a large bowl, toss the dough balls with the melted butter, the remaining 1/2 cup of mozzarella, and the chopped pepperoni pieces until evenly coated.
5. Layer in the Pan: Layer the coated dough balls and pepperoni pieces evenly into the prepared bundt pan, ensuring they are distributed evenly around the center column.
6. Bake: Bake in the preheated oven for 25 to 30 minutes, or until the pull-apart ring is puffed, golden brown, and the cheese is beautifully melted and bubbly.
7. Serve: Let it cool in the pan for 5 to 10 minutes, then carefully invert the bundt pan onto a serving platter. Place a small bowl of warm sugar-free marinara sauce in the center ring for dipping, and serve warm.
