Garlic Herb Roasted Veggies

Ingredients

 1 lb baby potatoes, halved

 2 carrots, sliced

 1 zucchini, sliced into half-moons

 2 tbsp olive oil

 3 cloves garlic, minced

 1 tsp dried oregano

 1 tsp dried thyme

 1/2 tsp paprika

 Salt to taste

 Black pepper to taste

 Fresh parsley, chopped (for garnish)

Instructions

1. Preheat and Prep: Preheat your oven to 400°F (205°C) and line a large baking sheet with parchment paper.

2. Season the Vegetables: In a large mixing bowl, combine the halved baby potatoes, sliced carrots, and zucchini half-moons.

3. Add Oil and Spices: Drizzle the olive oil over the vegetables. Add the minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper. Toss thoroughly until all the vegetables are evenly coated.

4. Arrange on Sheet Pan: Spread the seasoned vegetables onto the prepared baking sheet in a single layer. Ensure they are not overcrowded so they roast and crisp up rather than steam.

5. Roast: Bake in the preheated oven for 25 to 30 minutes, tossing halfway through, until the potatoes are fork-tender and the vegetables are beautifully caramelized and golden at the edges.

6. Garnish and Serve: Transfer the roasted vegetables to a serving bowl, garnish with freshly chopped parsley, and serve hot.
