Ingredients
2 lbs fresh ground beef
1 quart tomato juice
1 (29-ounce) can tomato purée
1 (15-ounce) can red kidney beans, drained
1 (15-ounce) can pinto beans, drained
1 large onion, chopped
1 green bell pepper, diced
1/2 cup celery, diced
2 tbsp chili powder
1 tsp ground cumin
1/2 tsp garlic powder
Salt and black pepper to taste
Instructions
1. Brown the Beef: In a large pot or Dutch oven over medium-high heat, cook the ground beef until it is fully browned and no longer pink. Drain off any excess grease.
2. Sauté the Vegetables: Add the chopped onion, diced green bell pepper, and diced celery to the pot with the beef. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables begin to soften.
3. Add Beans and Tomatoes: Stir in the drained red kidney beans, drained pinto beans, tomato juice, and tomato purée until thoroughly combined.
4. Season: Add the chili powder, ground cumin, garlic powder, salt, and black pepper. Stir well to evenly distribute the spices.
5. Simmer: Bring the chili to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for 1.5 to 2 hours, stirring occasionally, to allow the rich flavors to meld together and the chili to thicken.
6. Serve: Ladle hot into bowls and enjoy as is, or top with a sprinkle of shredded cheddar cheese and sour cream.
