Grandma Barb’s Chicken and Stuffing Casserole

Ingredients

 4 boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)

 1 box (6 oz) stuffing mix (such as Stove Top)

 1 can (10.5 oz) cream of chicken soup

 Optional (for moisture): 1/2 cup sour cream or water (to mix with the soup), and 1/2 cup melted butter or chicken broth (to moisten the stuffing)

Instructions

1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray.

2. Layer the Chicken: Place the bite-sized pieces of chicken breasts or thighs in an even layer at the bottom of the prepared baking dish. Season lightly with a pinch of salt and pepper if desired.

3. Add the Soup Layer: In a small bowl, whisk the cream of chicken soup with 1/2 cup of water, milk, or sour cream until smooth. Pour this mixture evenly over the chicken pieces.

4. Prepare and Add the Stuffing: In a separate bowl, toss the dry stuffing mix with 1/2 cup of warm water (or chicken broth) and 4 tablespoons of melted butter to slightly moisten it. Scatter the stuffing mixture evenly over the soup-covered chicken.

5. Bake: Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake uncovered for an additional 10 to 15 minutes, or until the stuffing is golden brown and crispy on top, and the chicken is fully cooked through (reaches an internal temperature of 165°F / 74°C).

6. Serve: Let the casserole cool for 5 minutes before serving. Enjoy the crispy stuffing and rich, creamy chicken layers.
