Ingredients
The Base: 12 slices of sandwich bread (makes 6 double-decker sandwiches)
The Inside Melt: 12 slices of your favorite melting cheese (like Cheddar, Swiss, Provolone, or Gouda)
The Outer Crust: 1 ½ cups shredded Mozzarella or Cheddar cheese

Step 1: Prep the Oven
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to catch any wild, dripping cheese for an easy cleanup later.
Step 2: Assemble the Sandwiches
Lay out 6 slices of bread on the baking sheet. Place two slices of your choice of sliced cheese onto each piece of bread. Cover them with the remaining 6 slices of bread to create 6 standard cheese sandwiches.
Step 3: Pile on the Top Crust
Divide the shredded cheese evenly among the tops of the 6 sandwiches, pressing down gently so it forms a neat layer across the upper slice of bread.
Step 4: Bake and Crisp
Pop the baking sheet into the oven for about 8 to 10 minutes, or until the cheese inside is completely melted and gooey. Turn your oven to the broiler setting for the final 1 to 2 minutes to get that gorgeous, golden-brown, bubbly crust on top. Keep a close eye on it so it doesn’t burn!
Step 5: Serve Warm
Remove from the oven and let them cool for just a minute so the cheese structure sets slightly. Cut them in half and serve immediately while the cheese is at peak stretchiness!
