Easy Spinach & Feta Puff Pastry Squares

Ingredients

 The Pastry: 2 sheets store-bought puff pastry, thawed but kept cold

 The Savory Filling:

 10 oz (approx. 280g) frozen chopped spinach, thawed and squeezed completely dry

 1 cup feta cheese, crumbled

 1 cup ricotta cheese (or softened cream cheese)

 1 large egg (plus 1 more for the egg wash)

 2 cloves garlic, minced (or ½ teaspoon garlic powder)

 Salt and freshly cracked black pepper to taste

 The Topping: 1 tablespoon sesame seeds

Step 1: Prep the Oven and Pastry

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper. Lay down the first sheet of thawed puff pastry onto the paper.

Step 2: Mix the Creamy Filling

In a medium bowl, combine the thoroughly squeezed spinach, crumbled feta, ricotta, 1 egg, minced garlic, salt, and black pepper. Stir well until the cheeses and spinach are completely integrated.

Step 3: Spread and Cover

Spread the spinach mixture evenly over the first sheet of puff pastry, leaving about a ½-inch border all around the edges. Lay the second sheet of puff pastry directly on top of the filling.

Step 4: Seal, Score, and Decorate

 Seal: Use the tines of a fork to press and crimp the edges of the pastry sheets together all the way around to seal the filling inside.

 Score: Using a sharp knife, gently slice through the top layer only of the pastry to divide it into 9 even squares (this makes it clean and easy to cut after baking).

 Brush: Whisk the remaining egg with a splash of water and brush it generously over the entire top crust. Sprinkle the sesame seeds evenly across the surface.

Step 5: Bake to Golden Perfection

Bake for 25 to 30 minutes, or until the puff pastry is beautifully puffed up, crisp, and a deep golden brown color.

Step 6: Serve

Let it cool for 5 to 10 minutes so the cheese filling sets up slightly. Cut completely through the scored lines into squares and serve warm
