Creamy Beef & Mushroom Rice Bake 

This comforting casserole combines savory ground beef, tender earthy mushrooms, and fluffy rice in a rich, creamy sauce. It is a hearty, one-pan farmhouse-style meal that requires minimal prep—perfect for busy weeknights or feeding a hungry family.

Ingredients

 1 lb lean ground beef (or ground turkey)

 1 cup fresh mushrooms, chopped or sliced

 1 small onion, diced

 1 cup uncooked long-grain white rice

 1 can (10.5 oz) cream of mushroom soup

 2 cups beef broth

 1/2 cup sour cream

 1 tsp garlic powder

 Salt and black pepper to taste

 1 cup shredded cheddar cheese (or mozzarella/Swiss mix)

 Fresh parsley, chopped (for garnish)

Instructions

1. Preheat and Prep

Preheat your oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish or a deep round casserole dish with non-stick cooking spray.

2. Brown the Meat and Veggies

 Cover the baking dish tightly with aluminum foil to trap the steam. Bake for 35 to 40 minutes, or until the rice is tender and has absorbed the liquid.

 Remove the foil, scatter the shredded cheddar cheese and an extra handful of sliced mushrooms evenly across the top, and return to the oven uncovered for an additional 5 minutes until the cheese is completely melted and bubbling, matching the golden crust shown in the image.
