Celery & Onions: Rich in natural antioxidants like luteolin and quercetin to help soothe inflammation and support gut digestion.
Ingredients
1 lb lean ground turkey (or ground chicken)
1 box (6 oz) herb stuffing mix (like Stove Top or low-sodium alternative)
1/2 cup diced celery
1/2 cup diced onion
1 large egg, beaten
3/4 cup warm chicken or turkey broth (for stuffing)
1/2 tsp garlic powder
1/2 tsp dried thyme or poultry seasoning
Salt and black pepper, to taste
1 jar (12 oz) low-sodium turkey or chicken gravy
Instructions
1. Preheat & Prep: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or spray lightly with non-stick spray.
2. Moisten Stuffing: In a medium bowl, combine the herb stuffing mix and warm chicken broth. Let it sit for 3–5 minutes until softened and absorbed.
3. Mix Meatball Ingredients: In a large bowl, combine the ground turkey, softened stuffing, diced celery, diced onion, beaten egg, garlic powder, dried thyme, salt, and black pepper. Gently mix until completely incorporated.
4. Form & Bake: Roll the mixture into 12 large, equal-sized meatballs and place them on the prepared baking sheet. Bake for 22–25 minutes, or until cooked through and golden brown on top (internal temperature reaches 165°F / 74°C).
5. Add Gravy & Serve: Heat the turkey gravy in a small saucepan over medium heat until warm. Spoon the rich gravy generously over the warm meatballs before serving!
