1 cup blueberries (fresh or frozen)
1 1/2 cups rolled oats
2 eggs
1/3 cup honey or maple syrup
1/2 cup milk (any kind)
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
A pinch of salt
Instructions
1. Preheat and Prep
Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving a little overhang on the sides for easy removal, or lightly grease it with cooking spray.
2. Mix the Wet Base
In a large bowl, whisk the 2 eggs thoroughly. Stir in the honey (or maple syrup), milk, and vanilla extract until completely combined.
3. Combine the Dry Ingredients
Add the rolled oats, cinnamon, baking powder, and a pinch of salt directly to the wet mixture. Stir well with a spatula until all the oats are completely moistened and the batter is uniform.
4. Layer the Bars
Pour about two-thirds of the oat batter into the bottom of your prepared pan, smoothing it out into an even layer with your spatula.
Scatter the fresh or frozen blueberries evenly across the oat base.
