This cottage cheese cookie dough is a delicious, high-protein treat that is both easy to make and highly requested by those who try it. It provides a healthier alternative to traditional cookie dough while maintaining a satisfying texture and flavor.
Ingredients
• 1 cup cottage cheese
• 2 tbsp maple syrup
• 1 tsp vanilla extract
• 2 cups almond flour (or oat flour for a different texture)
• 1/2 cup chocolate chips
Instructions
1. Blend the Base
In a high-speed blender or food processor, combine the cottage cheese, maple syrup, and vanilla extract. Blend until the mixture is completely smooth and creamy, with no lumps remaining from the cottage cheese.
2. Mix in the Flour
Pour the blended mixture into a medium-sized bowl. Gradually stir in the almond flour (or oat flour) until a thick, dough-like consistency is formed.
3. Fold in the Extras
Gently fold in the chocolate chips until they are evenly distributed throughout the dough.
4. Scoop and Set
Using a small cookie scoop or spoon, form the dough into rounded balls, as shown in image_18.png. Place them on a tray lined with parchment paper.
5. Chill and Serve
Place the tray in the refrigerator for at least 30 minutes to allow the dough to firm up. These protein-packed bites can be enjoyed immediately or stored in an airtight container in the refrigerator for up to 5 days.
