Ingredients
• Sugar: 6 cups of granulated sugar (divided).
• Baking Soda: 1/4 teaspoon.
• Heavy Cream: 2 cups (or evaporated milk).
• Butter: 1/2 cup (1 stick).
• Vanilla Extract: 1 teaspoon.
• Pecans: 2 cups of chopped pecans (the secret to the crunch).
Instructions
1. Caramelize: Melt 2 cups of sugar in a heavy skillet over medium heat, stirring constantly until it turns into a golden-brown liquid syrup.
2. Boil: In a separate large pot, bring the remaining 4 cups of sugar and the heavy cream to a boil.
3. Combine: Very slowly, pour the hot caramelized sugar into the boiling cream mixture. Stir constantly.
4. Cook: Cook the mixture until it reaches the “Soft Ball Stage” (about 115°C or 240°F on a candy thermometer).
5. Finish: Remove from heat, add baking soda (it will foam up), butter, and vanilla. Beat the mixture with a wooden spoon until it starts to lose its shine and thickens.
6. Set: Fold in the pecans and pour into a buttered 9×13 inch pan. Let it cool completely before cutting into squares (as seen in your image).
Benefits
• Instant Mood Booster: Dark caramel and sugar stimulate the release of endorphins, making it a perfect “comfort food” for the holidays.
• Brain Energy: The natural fats from pecans and dairy provide a quick source of energy for mental tasks.
• Nutrient-Dense Nuts: Pecans are rich in antioxidants and healthy fats (Omega-6), which support heart health when consumed in moderation.
• Tradition & Connection: Making “heirloom” recipes like this reduces stress by fostering a sense of nostalgia and family connection.
