1 1/2 cups low-fat milk or unsweetened almond milk
1 scoop (30g) chocolate whey or casein protein powder
2 tbsp unsweetened cocoa powder
2 tbsp powdered peanut butter (PB2)
2 tbsp creamy natural peanut butter (for swirling)
1-2 tbsp zero-calorie sweetener (such as stevia or erythritol, to taste)
1 tbsp dark chocolate chips or cacao nibs, crushed
Pinch of fine sea salt
Instructions
1. Prepare the Chocolate Base: In a blender, combine the milk, chocolate protein powder, unsweetened cocoa powder, powdered peanut butter, sweetener, and a pinch of salt. Blend on high speed until completely smooth and frothy.
2. First Freeze: Pour the mixture into a freezer-safe tub or container. Cover with a lid and freeze for 2–3 hours until semi-firm around the edges.
3. Swirl & Mix-ins: Remove from the freezer. Stir the ice cream vigorously with a fork or hand mixer to break up ice crystals. Gently fold in the crushed dark chocolate chips/cacao nibs, then drizzle the creamy peanut butter over the top and swirl it through using a knife.
4. Final Freeze: Return to the freezer for another 2–3 hours until firm and scoopable.
5. Serve: Let the ice cream sit at room temperature for 5 minutes before scooping for the creamiest texture.
