1 1/2 cups almond flour (or coconut flour)
1/2 cup unsalted butter, softened
1/2 cup zero-calorie granulated sweetener (such as erythritol or monk fruit)
2 large eggs, room temperature
1 scoop (30g) vanilla whey protein powder
1 tsp vanilla extract
1/2 tsp baking soda
1/2 cup sugar-free dark chocolate chips (divided)
Pinch of salt
Instructions
1. Preheat & Prepare: Preheat your oven to 350°F (175°C). Lightly grease an 8-inch pie dish or springform pan.
2. Mix Wet Ingredients: In a large bowl, cream together the softened butter and zero-calorie sweetener until smooth. Beat in the eggs one at a time, then add the vanilla extract.
3. Combine Dry Ingredients: Add the almond flour, protein powder, baking soda, and salt to the wet mixture. Stir until a thick cookie dough forms.
4. Fold & Layer: Gently fold in half of the sugar-free chocolate chips. Transfer the dough into the prepared pie dish, spreading it evenly.
5. Top & Bake: Sprinkle the remaining chocolate chips on top. Bake for 20–25 minutes until the crust is golden brown and the center is set.
6. Cool & Serve: Allow the pie to cool completely before slicing to let the rich chocolate layer set.
