Ingredients (from photo)
2 cups low-fat cottage cheese (or 1 cup cottage cheese + 1 cup non-fat Greek yogurt)
1 box (1 oz) Sugar-Free Jell-O Cheesecake Instant Pudding Mix
1 scoop (approx. 30g) vanilla protein powder
1/4 cup unsweetened almond milk (to smooth if needed)
1 1/2 cups fresh strawberries, diced
2 tbsp sugar-free strawberry chia jam or strawberry sauce
4 graham crackers, crushed (for the base and crumble topping)
Instructions
1. Make the Cheesecake Base: Add the low-fat cottage cheese (and/or Greek yogurt), Sugar-Free Jell-O Cheesecake Pudding Mix, vanilla protein powder, and almond milk into a high-speed blender or food processor.
2. Blend Until Velvety: Blend on high speed for 1–2 minutes until silky smooth, creamy, and completely free of curd texture.
3. Prep the Crust Base: Divide half of the crushed graham crackers evenly among the bottoms of 4 glass meal-prep containers.
4. Layer the Cheesecake & Fruit: Spoon a layer of the creamy cheesecake mixture over the crusts. Add a layer of diced fresh strawberries and a swirl of strawberry jam, then top with the remaining cheesecake mixture.
5. Garnish & Chill: Top each container with the remaining diced fresh strawberries and a sprinkle of crushed graham cracker crumbs. Cover and refrigerate for at least 30 minutes to set before serving!
