Ingredients
4 boneless skinless chicken breasts or chicken thighs
2 Tbsp olive oil
1 Tbsp butter
8 oz mushrooms, sliced
3 cups fresh spinach
3 cloves garlic, minced
1/2 cup heavy cream (or light cream)
1/4 cup grated Parmesan cheese
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped for garnish
Instructions
1. Sear the Chicken: Season both sides of the chicken breasts or thighs with salt and pepper. Heat 1 tablespoon of olive oil and the butter in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes per side until golden brown and cooked through (internal temperature reaches 165°F / 74°C). Remove the chicken from the skillet and set aside on a plate.
2. Sauté Mushrooms: Add the remaining olive oil to the same skillet. Add the sliced mushrooms and cook for 4–5 minutes until golden and tender.
3. Add Garlic & Spinach: Stir in the minced garlic and cook for 1 minute until fragrant. Add the fresh spinach and toss gently until just wilted.
4. Make the Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth, creating a creamy sauce.
5. Combine & Serve: Return the cooked chicken back into the skillet, spooning the creamy mushroom and spinach sauce generously over the top. Garnish with freshly chopped parsley and serve warm!
