1 lb ground beef
1 medium onion, finely diced
2 cloves garlic, minced
1 packet (1 oz) taco seasoning
½ cup beef broth or water
8 medium flour tortillas (or corn tortillas)
1 can (10 oz) red enchilada sauce
2 cups shredded Mexican blend cheese (or Monterey Jack and Cheddar)
1 cup sour cream (for spreading inside)
2 tbsp olive oil (for cooking)
Fresh cilantro or parsley, chopped (for garnish)
Instructions
1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray or a thin brush of olive oil.
2. Cook the Beef Fillings: Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3 to 4 minutes until translucent. Add the minced garlic and cook for 1 more minute. Add the ground beef, breaking it up with a spoon, and cook until browned and no longer pink. Drain off any excess grease.
3. Season the Meat: Stir in the taco seasoning and beef broth (or water). Simmer on low heat for 5 minutes until the liquid has reduced and the beef is well coated in sauce. Remove from heat.
4. Assemble the Folds: Lay the tortillas flat on a clean surface. Spread a thin layer of sour cream down the center of each tortilla. Top with a generous scoop of the seasoned ground beef, a drizzle of red enchilada sauce, and a sprinkle of shredded cheese.
5. Fold and Layer: Fold the sides of the tortilla over the filling to create a wide, flat wrap (or semi-folded pocket) where the cheesy ends peek through. Place each folded tortilla seam-side down in the prepared baking dish, packing them snugly next to each other.
6. Top and Bake: Spoon the remaining red enchilada sauce evenly over the tops of the folded tortillas, then blanket them with the remaining shredded cheese. Cover the baking dish with foil and bake for 15 minutes. Remove the foil and bake for an additional 5 to 7 minutes, or until the cheese is melted, bubbly, and slightly golden.
7. Garnish and Serve: Garnish with freshly chopped cilantro or parsley and serve hot.
