Ingredients
1 lb shrimp, peeled and deveined
1 tbsp soy sauce
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
2 tbsp olive oil
2 cups bok choy, chopped
Optional: 1 tsp minced ginger, ¼ tsp red chili flakes, a squeeze of fresh lemon juice, or sesame seeds (for garnish)
Instructions
1. Marinate the Shrimp: In a medium bowl, combine the peeled and deveined shrimp with the soy sauce, salt, black pepper, and garlic powder. If using optional ginger or chili flakes, toss them in now. Let the shrimp marinate at room temperature for 5 to 10 minutes.
2. Cook the Shrimp: Heat the olive oil in a large skillet or wok over medium-high heat. Add the marinated shrimp in a single layer. Sear for about 2 minutes on one side, then flip and cook for another 1 to 2 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside on a plate to prevent overcooking.
3. Stir-fry the Bok Choy: In the same skillet (adding a splash more oil if needed), toss in the chopped bok choy. Stir-fry over medium-high heat for 2 to 3 minutes until the green leaves are wilted and the white stalks are tender-crisp.
4. Combine and Serve: Return the cooked shrimp and any collected juices back to the skillet. Toss everything together for 1 minute to warm through and combine the flavors. Finish with a squeeze of fresh lemon juice if desired, garnish with sesame seeds, and serve hot.
