Ingredients

 4 medium potatoes, peeled and grated

 1 bell pepper (red or green), finely chopped

 3 spring onions (scallions), finely chopped

 3 large eggs

 3 tbsp olive oil (plus extra for brushing)

 3 tbsp all-purpose flour

 1 cup shredded mozzarella or cheddar cheese (optional, for topping)

 1 tsp salt

 1/2 tsp black pepper

 1/2 tsp paprika or chili flakes (optional)

Instructions

1. Prepare the Potatoes: Grate the peeled potatoes using a box grater. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much excess liquid and starch as possible. This is crucial for achieving a crispy texture.

2. Preheat and Prep: Preheat your oven to 390°F (200°C) and line a large baking sheet with parchment paper. Brush the parchment paper lightly with a little olive oil.

3. Mix the Batter: In a large bowl, whisk the eggs, olive oil, flour, salt, black pepper, and optional paprika until smooth.
