1 cup almond flour (super-fine)
1/4 cup coconut flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup erythritol or monk fruit sweetener (brown sugar style preferred)
1 large egg, room temperature
1 tsp vanilla extract
1/2 cup sugar-free chocolate chips (dark or milk chocolate)
1/2 cup unsweetened shredded coconut
1/2 cup chopped pecans
Instructions
1. Preheat and Prepare: Preheat your oven to 350°F (180°C) and line a large baking sheet with parchment paper.
2. Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, coconut flour, baking powder, and salt. Set aside.
3. Cream Butter and Sweetener: In a large bowl, use a hand mixer to beat the softened butter and sweetener together until light and fluffy.
4. Add Wet Ingredients: Beat in the egg and vanilla extract until fully incorporated.
5. Combine: Gradually stir the dry ingredients into the wet mixture until a soft dough forms.
6. Fold in Mix-ins: Gently fold in the sugar-free chocolate chips, shredded coconut, and chopped pecans using a spatula until evenly distributed.
7. Shape and Bake: Scoop the dough into 1.5-inch balls and place them on the prepared baking sheet. Flatten each ball slightly with your fingers or the back of a spoon, as keto cookies do not spread much during baking.
8. Bake and Cool: Bake for 10 to 12 minutes, or until the edges are lightly golden brown. Remove from the oven and let them cool on the baking sheet for 10 minutes (they will be soft at first), then transfer them to a wire rack to cool completely and firm up.
