500g ground beef
1 medium zucchini, sliced
1 cup cherry tomatoes, halved
1 small red onion, sliced
1 small yellow onion, sliced
2 cloves garlic, minced
100g feta cheese, crumbled
2 tbsp olive oil
Salt and pepper to taste
1 tsp dried oregano
Fresh parsley, chopped (for garnish)
Instructions
1. Sauté the Aromatics: Heat the olive oil in a large skillet over medium-high heat. Add the sliced red and yellow onions and sauté for about 3 to 4 minutes until they begin to soften. Add the minced garlic and cook for another 1 minute until fragrant.
2. Brown the Beef: Add the ground beef to the skillet. Cook, breaking it up with a wooden spoon, until it is fully browned and cooked through (about 6 to 8 minutes). Drain any excess grease if necessary.
3. Add Vegetables and Seasoning: Season the beef with salt, black pepper, and dried oregano. Toss in the sliced zucchini and halved cherry tomatoes. Stir well to combine.
4. Simmer: Reduce the heat to medium and cook for another 5 to 7 minutes, stirring occasionally, until the zucchini is tender-crisp and the cherry tomatoes start to soften and release their juices.
5. Garnish and Serve: Remove the skillet from the heat. Sprinkle the crumbled feta cheese and chopped fresh parsley over the top. Serve hot directly from the skillet.
