Ingredients
The Chicken & Seasoning:
4 bone-in, skin-on chicken thighs
2 tbsp olive oil
1 tsp salt
\frac{1}{2} tsp black pepper
1 tsp garlic powder
The Savory Cream Sauce:
8 oz mushrooms, sliced
1 small onion, diced
2 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
\frac{1}{2} cup grated Parmesan cheese
1 tsp dried thyme
1 tbsp fresh parsley, chopped (for garnish)

Step 1: Prep and Preheat
Preheat your oven to 375°F (190°C). Pat the chicken thighs completely dry with paper towels—this is the secret to getting a gorgeous, crispy skin! Season both sides evenly with the salt, black pepper, and garlic powder.
Step 2: Sear the Chicken
Heat the 2 tablespoons of olive oil in a large skillet over medium-high heat. Place the chicken thighs in the skillet, skin-side down. Sear for 5 to 6 minutes until the skin is deep golden and crispy. Flip and sear the other side for another 3 to 4 minutes. Transfer the seared thighs to a 9×13-inch baking dish.
Step 3: Sauté the Aromatics and Mushrooms
Pour out all but about 1 to 2 tablespoons of the rendered chicken fat from the skillet (keep those brown bits on the bottom for maximum flavor!). Toss in the diced onion and sliced mushrooms. Sauté for about 5 minutes until the mushrooms are beautifully browned and the onions are tender. Stir in the minced garlic and dried thyme, cooking for 1 more minute until fragrant.
Step 4: Simmer and Thicken the Sauce
Slowly pour in the chicken broth, using your wooden spoon to scrape up all the flavorful browned bits from the bottom of the pan. Stir in the heavy cream and grated Parmesan cheese. Bring the mixture to a gentle simmer for 2 to 3 minutes until the cheese is melted and the sauce begins to thicken into a silky glaze.
Step 5: Assemble and Bake
Pour the creamy garlic mushroom sauce all over the chicken thighs in the baking dish, letting some of the sauce pool over the crispy skins.
Bake uncovered for 25 to 30 minutes until the sauce is bubbling up around the edges and the chicken thighs reach an internal temperature of 165°F (74°C).
Step 6: Garnish and Plate
Let the bake rest for 5 minutes to let the sauce set. Garnish with a generous sprinkle of fresh chopped parsley before serving. It is absolute heaven spooned over wild rice, garlic mashed potatoes, or your favorite pasta!
