Cozy Chicken and Stuffing Casserole

Ingredients

4 boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

1 box (6 oz) stuffing mix (like Stove Top)

1 can (10.5 oz) cream of chicken soup

 ½ cup sour cream

 ½ cup chicken broth

 ½ cup unsalted butter, melted

 1 tsp garlic powder

 ½ tsp onion powder

 ½ tsp black pepper

 ¾ tsp salt

 Fresh parsley, chopped (for garnish)

🥣 Directions

Step 1: Prep the Oven and Pan

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish (or a large oval casserole dish like the one in the photo) with cooking spray or a little butter.

Step 2: Season the Chicken

Place your bite-sized chicken pieces directly into the bottom of the prepared baking dish in an even layer. Season the chicken evenly with the garlic powder, onion powder, salt, and black pepper.

Step 3: Mix the Creamy Sauce

In a medium bowl, whisk together the cream of chicken soup, sour cream, and chicken broth until completely smooth. Pour this mixture evenly over the seasoned chicken pieces, using a spatula to spread it so the chicken is fully covered.

Step 4: Add the Stuffing Layer

Sprinkle the dry stuffing mix evenly over the top of the creamy sauce layer. Next, pour the ½ cup of melted butter evenly over the dry stuffing—this is the secret to getting those beautifully golden, crisp, and flavorful buttery clusters on top!

Step 5: Bake Until Golden

Bake uncovered for 35 to 40 minutes. The casserole is ready when the chicken is fully cooked through, the edges are bubbling, and the stuffing on top is a gorgeous golden brown.

Step 6: Garnish and Serve

Remove from the oven and let it sit for about 5 minutes to cool slightly and set up. Garnish with a sprinkle of fresh chopped parsley and serve hot!
