Ingredients
The Protein Base: 1 scoop (approx. 30g) Casein protein powder or a Whey/Casein blend (Vanilla or Strawberry flavor)
The Volume Builder: ½ teaspoon xanthan gum (essential for trapping the air!)
The Fruit & Ice: 1 cup frozen strawberries (approx. 140g) + 4-5 ice cubes
The Liquid: ½ cup cold water or unsweetened almond milk
Sweetener Boost (Optional): A few drops of liquid stevia or a squeeze of zero-calorie sweetener if you like it extra sweet
Why Casein? Casein protein powder absorbs liquid much better than 100% whey isolate, resulting in a much thicker, more stable marshmallow-like texture that won’t deflate instantly.
Directions
Step 1: Blend the Base
Add the frozen strawberries, ice cubes, cold water (or almond milk), and optional sweetener into a high-powered blender. Blend on high until the fruit and ice are completely pulverized into a thick, smooth smoothie texture.
Step 2: Add the Magic Ingredients
Add the scoop of protein powder and exactly ½ teaspoon of xanthan gum directly into the blender.
Step 3: Whip into a Cloud
Secure the lid and turn your blender or food processor to its highest speed. Let it blend continuously for 3 to 5 minutes. You will literally watch the mixture multiply in size, expanding and climbing up the sides of the blender jar as it traps air and transforms into a thick, dense, glossy soft-serve.
Step 4: Portion and Chill (or Eat!)
Scoop the fluff out into meal-prep containers (just like in the photo) or a massive bowl. You can eat it immediately as a fluffy mousse, or pop the containers into the freezer for 30–45 minutes to give it a firmer, ice-cream-like bite. Enjoy the ultimate high-volume snack!
