Step 1: Blend the Base Until Silky
In a food processor or a high-powered blender, combine the cottage cheese (or Greek yogurt), softened cream cheese, your choice of sweetener, and the peppermint extract. If you want that pale green color, add a tiny drop of green food coloring now. Blend on high for 1 to 2 minutes until the mixture is completely smooth and velvety, with absolutely zero lumps left from the cottage cheese.
Step 2: Fold in the Chocolate
Pour the smooth mint cream into a bowl. Gently fold in the chopped dark chocolate chips or cacao nibs with a spatula so they are evenly distributed throughout the mixture.
Step 3: Freeze to Perfection
Transfer the mixture into a shallow, freezer-safe container or a small tub. Cover it and place it in the freezer for about 1 to 2 hours. You want it to firm up and get incredibly cold, but not freeze solid into a block of ice.
Step 4: Scoop and Serve
