Ingredients
The Protein Base: 1/2 cup plain low-fat Greek yogurt, 1/2 cup ultra-filtered milk (like Fairlife) or soy milk, 1 scoop chocolate whey or plant-based protein powder
The Brownie Flavor: 1 tablespoon unsweetened cocoa powder, 1 tablespoon chia seeds (optional, for thickness)
The Sweetener: 1 teaspoon maple syrup, honey, or a stevia drop (adjust to taste)
The Texture Crunch: 1/4 cup brownie protein granola, 2 tablespoons chopped pecans
Instructions
Step 1: Whip Up the Protein Base
In a small mixing bowl or directly inside your meal-prep glass jar, combine the Greek yogurt, milk, and chocolate protein powder. Stir vigorously with a spoon or a mini whisk until the powder completely dissolves and the mixture is entirely smooth and creamy.
Step 2: Make it Extra Fudgy
Add the unsweetened cocoa powder and chia seeds to the mixture. Stir well to incorporate. The cocoa powder deepens the rich brownie flavor, while the chia seeds will expand overnight to give the jar a thick, pudding-like consistency. Taste and stir in your preferred sweetener if desired.
Step 3: Layer the Crunch
Smooth out the top of your chocolate protein mixture. Gently pour the brownie protein granola over the top in an even layer, followed by a generous scattering of the chopped pecans.
Step 4: Seal and Chill
Secure the lid tightly on your jar. Place it in the refrigerator for at least 2 hours, or ideally overnight. This allows the chia seeds to set and gives the oats and granola time to soften slightly while keeping that perfect, satisfying crunch from the pecans. Dig in with a long spoon straight from the fridge!
