Ingredients
The Creamy Mousse Base: 8 oz cream cheese (softened), 1 cup heavy whipping cream
The Key Lime Tang: ¼ cup fresh key lime juice (or regular lime juice), 1 tbsp lime zest (finely grated)
The Sweetener: ⅓ cup powdered erythritol or allulose (adjust to taste)
The Crunch Layer (Low-Carb): ⅓ cup crushed pork rinds mixed with a pinch of cinnamon and sweetener (sounds unusual, but mimics graham cracker crust flawlessly with zero carbs!) OR crushed keto-friendly almond flour cookies.

Instructions
Step 1: Whip the Heavy Cream
In a chilled mixing bowl, pour in the 1 cup of heavy whipping cream. Using an electric hand mixer or a stand mixer fitted with a whisk attachment, beat the cream on high speed until stiff peaks form. Transfer the whipped cream to a separate bowl and set aside.
Step 2: Beat the Sweetened Cream Cheese Base
In the same mixing bowl, add the softened cream cheese and your powdered low-carb sweetener. Beat on medium-high speed for 2 to 3 minutes until the mixture is completely smooth, creamy, and free of any lumps.
Step 3: Add the Citrus Flavour
Pour the fresh key lime juice and most of the finely grated lime zest into the cream cheese mixture. Beat on low speed until the liquid is fully incorporated into the cream cheese.
Step 4: Fold Into a Light Mousse
Gently transfer the whipped cream into the bowl with the lime cream cheese base. Using a rubber spatula, carefully fold the two mixtures together. Use slow, sweeping motions so you do not deflate the air in the whipped cream, resulting in a pale green, ultra-fluffy mousse.
