Nourishing Nighttime Beetroot Juice

This simple, vibrant elixir is an excellent way to incorporate the incredible health benefits of fresh beets into your nightly routine. Ingredients

 The Star: 3 to 4 medium beetroots, thoroughly washed and peeled

 The Brightener: 1 large green apple or pear (cored and sliced)

 The Citrus: 1/2 a lemon or lime (peeled)

 The Kick: 1/2-inch knob of fresh ginger root (peeled)

 Optional Hydration: 1/2 cup pure coconut water or filtered water

Instructions

Step 1: Prep the Veggies

Trim the tops and bottoms off your washed beetroots. Carefully peel away the tough outer skin using a vegetable peeler until you have smooth, deep-crimson rounds, exactly like the ones shown in image_14.png. Slice the beets into manageable wedges that easily fit your juicer or blender chute.

Step 2: Extract the Juice

 If using a Juicer: Feed the beetroot wedges, apple slices, citrus, and fresh ginger through the machine. Collect the vibrant red juice in a pitcher.

 If using a Blender: Combine all the chopped ingredients in a high-speed blender with 1/2 cup of filtered water. Blend on high for 2 minutes until completely liquefied. Pour the mixture through a fine-mesh strainer or a nut milk bag into a bowl, squeezing out all the liquid and discarding the fibrous pulp.

Step 3: Mix and Chill

Stir the strained juice thoroughly. If it tastes too earthy, mix in a splash of coconut water or an extra squeeze of fresh lemon juice to balance the flavors.

Step 4: Serve and Sip

Pour the crimson juice into a glass and serve immediately, or chill it in the refrigerator for 20 minutes before drinking. Enjoy this earthy, sweet, and comforting tonic about an hour before bedtime.
