This ultra-fast mug bread is a complete game-changer for anyone cutting out flour and processed sugars. Using just 3 simple base ingredients, it cooks directly in the microwave in only 90 seconds, rising into a soft, airy, and surprisingly sturdy bread structure. It is perfect for slicing, toasting, and slathering with a pat of rich farmhouse butter for a comforting, low-carb breakfast or quick snack.
Ingredients
3 tbsp almond flour (or 1 tbsp coconut flour for a nut-free option)
1 large egg
1/2 tsp baking powder
1 tbsp unsalted butter, melted (or olive oil)
A pinch of salt
Instructions
1. Mix the Liquid Base
Grab a microwave-safe glass mug or a small ramekin as shown in image_15.png. Add the 1 tablespoon of melted butter and crack in the 1 large egg. Whisk them together thoroughly with a small spoon or fork until completely smooth.
2. Incorporate the Dry Ingredients
Add the 3 tablespoons of almond flour, 1/2 teaspoon of baking powder, and a pinch of salt directly into the mug with the egg mixture.
3. Blend Until Uniform
Stir the ingredients vigorously, scraping the bottom edges of the mug, until a thick, uniform batter forms with no dry flour pockets remaining. The texture should look thick and slightly bubbly, exactly like the top panel of image_15.png. Use your spoon to smooth down the surface.
4. Microwave to Rise
Place the mug uncovered into the center of your microwave. Cook on HIGH for 90 seconds. Watch it closely—the batter will rapidly puff up and rise past the rim of the mug into a beautiful dome shape.
5. Check and Cool
Touch the top of the bread gently; it should feel springy and dry. If it still feels slightly wet, microwave it for an additional 10 to 15 seconds. Let it rest in the mug for 1 minute to cool down slightly.
6. Slice and Serve
Run a butter knife around the inner edges of the mug and tip it upside down. The bread loaf will slide right out. Slice it into uniform rounds, spread a generous slab of butter in the center, and enjoy it warm!
