Anti-Inflammatory Highlights

Mushrooms: Rich in ergothioneine and selenium, powerful antioxidants that support immune defense and help regulate cellular inflammation.

Fresh Garlic: Contains bioactive organosulfur compounds known to bolster cardiovascular health and ease oxidative stress.

Coarse Black Pepper: Delivers piperine, which enhances nutrient absorption and provides natural warming, anti-inflammatory properties.

Ingredients

1 lb chicken breast or thighs, cut into bite-sized pieces

 8 oz mushrooms, sliced

 1/2 red bell pepper, sliced

 1/2 green bell pepper, sliced

 2 cloves garlic, minced

 2 Tbsp soy sauce

 1 Tbsp oyster sauce

1 Tbsp honey or brown sugar

1 tsp black pepper, coarse ground

 1/2 tsp salt

2 Tbsp olive oil or vegetable oil

 1 tsp cornstarch

 2 Tbsp water

Instructions

1. Prep the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, honey (or brown sugar), coarse ground black pepper, cornstarch, and water until smooth. Set aside.

2. Sear the Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken pieces, season with salt, and cook for 5–6 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

3. Cook Veggies: Add the remaining 1 tablespoon of oil to the same skillet. Toss in the sliced mushrooms, red bell pepper, and green bell pepper. Stir-fry for 4–5 minutes until the mushrooms are tender and browned.

4. Add Aromatics: Add the minced garlic to the skillet and cook for 30–60 seconds until fragrant.

5. Combine & Thicken: Return the cooked chicken to the skillet with the vegetables. Pour the sauce mixture over everything. Toss well and cook for 1–2 minutes until the sauce bubbles and thickens into a glossy glaze coating the chicken and mushrooms.

6. Serve: Remove from heat, plate warm, and enjoy!
