 2 cups broccoli florets (180 g)

2 cups Yukon gold potatoes, cubed (300 g)

3 tablespoons olive oil (45 ml)

 1/2 cup pecans, roughly chopped

 1/3 cup dried cranberries

 1/4 cup crumbled feta cheese

 2 tablespoons honey

 1 tablespoon apple cider vinegar

 1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Instructions

1. Preheat & Prep: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

2. Arrange the Veggies: Place the cubed butternut squash, sliced carrots, broccoli florets, and Yukon gold potatoes evenly onto the prepared baking sheet.

3. Oil and Season: Drizzle the olive oil over the vegetables. Sprinkle with garlic powder, salt, and black pepper, then toss thoroughly until every piece is evenly coated.
