1 cup low-fat cottage cheese (or 3/4 cup non-fat Greek yogurt + 1/4 cup light cream cheese)
1 scoop (30g) vanilla or orange creamsicle protein powder
1 tbsp fresh orange juice
1/2 tsp fresh orange zest
1 tbsp zero-calorie sweetener (such as erythritol or stevia)
Toppings:
2 tbsp diced fresh orange segments
1 tbsp sugar-free orange marmalade or caramel drizzle
Extra orange zest and graham cracker crumbs for garnish
Instructions
1. Prepare Base: In the bottom of a glass container or bowl, mix the crushed graham crackers with melted butter and press lightly to form the crust.
2. Blend Cheesecake Base: In a food processor or high-speed blender, process the cottage cheese, protein powder, fresh orange juice, orange zest, and sweetener until completely smooth, silky, and thick.
3. Assemble: Layer the whipped orange cheesecake mixture directly over the crushed graham crust.
4. Garnish & Chill: Drizzle with sugar-free orange marmalade, then top with diced fresh orange segments, a sprinkle of orange zest, and remaining graham crumbs. Chill in the freezer for 10 minutes (or fridge for 20 minutes) to set before serving!
