Ingredients
1/2 cup low-fat cottage cheese or plain Greek yogurt (blended smooth)
2 large eggs, room temperature
1/2 cup unsweetened cocoa powder
1 scoop (30g) chocolate whey or casein protein powder
1/3 cup zero-calorie granulated sweetener (such as erythritol, monk fruit, or stevia)
1/4 cup unsweetened almond milk
1 tsp baking powder
1/2 tsp vanilla extract
1/2 cup fresh or frozen raspberries (plus extra for topping)
2 tbsp sugar-free dark chocolate chips (optional fold-in)
Instructions
1. Preheat & Prepare: Preheat your oven to 350°F (175°C). Line an 8×6-inch or 8×8-inch glass baking dish with parchment paper or spray with non-stick cooking spray.
2. Blend Batter: In a blender or food processor, combine the blended cottage cheese (or Greek yogurt), eggs, cocoa powder, chocolate protein powder, zero-calorie sweetener, almond milk, baking powder, and vanilla extract. Blend until smooth and fudgy.
3. Fold in Mix-Ins: Gently fold in half of the raspberries (and chocolate chips, if using) with a spatula.
4. Pour & Top: Pour the batter evenly into the prepared baking dish. Press the remaining raspberries gently into the top of the batter.
5. Bake & Cool: Bake for 22–25 minutes until the edges are firm and a toothpick inserted into the center comes out mostly clean with a few fudgy crumbs. Allow to cool for at least 15 minutes before slicing!
