1/2 cup powdered peanut butter (such as PB2 or PBfit)
3 tbsp water (or sugar-free maple syrup to adjust consistency)
1/2 cup sugar-free dark or milk chocolate chips
1 tsp coconut oil (optional, for smooth melting)
Instructions
1. Make PB Filling: In a small bowl, mix the powdered peanut butter with water (or sugar-free syrup) until a smooth, thick peanut butter dough forms.
2. Roll Into Balls: Roll the dough into 12 small, equal-sized bite balls. Place them on a parchment-lined plate or tray and freeze for 10–15 minutes to firm up.
3. Melt Chocolate: In a microwave-safe bowl, melt the sugar-free chocolate chips with coconut oil in 30-second intervals, stirring in between until silky smooth.
4. Dip & Coat: Using a fork, dip each chilled peanut butter ball into the melted chocolate, coating it completely. Let the excess chocolate drip off, then place back on the parchment paper.
5. Set & Enjoy: Freeze for 10 minutes until the chocolate shell sets completely. Store in an airtight container in the fridge or freezer!
