Chocolate Mug Cake

Ingredients

 1 large egg

1 medium banana, mashed (or 1/4 cup unsweetened applesauce)

 2 tbsp unsweetened cocoa powder

1 tbsp zero-calorie granulated sweetener (such as monk fruit or stevia)

 1/2 tsp baking powder

 1/2 tsp vanilla extract

 Pinch of salt

1 tbsp unsweetened almond milk (optional, if batter is too thick)

Instructions

1. Mash Banana: In a microwave-safe mug, mash the banana with a fork until smooth.

2. Combine Wet Ingredients: Add the egg and vanilla extract to the mug, whisking well with a fork until thoroughly combined.

3. Add Dry Ingredients: Mix in the unsweetened cocoa powder, zero-calorie sweetener, baking powder, and a pinch of salt. Stir until a smooth chocolate batter forms (add 1 tbsp almond milk if needed).

4. Microwave: Microwave on high for 60 to 90 seconds (time may vary depending on microwave wattage). Watch carefully so it doesn’t overflow.

5. Cool & Enjoy: Let it cool for 1–2 minutes before serving directly from the mug.
