Ingredients
1 lb fresh okra, sliced into ½-inch pieces
1 cup buttermilk
1 cup cornmeal
½ cup all-purpose flour
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp garlic powder
Vegetable oil (for frying)
Instructions
1. Soak the Okra: Place the sliced okra in a bowl and pour the buttermilk over it. Let it soak for 5–10 minutes to help the coating stick.
2. Mix the Dredge: In a separate medium bowl or shallow dish, whisk together the cornmeal, all-purpose flour, salt, black pepper, paprika, and garlic powder.
3. Coat the Okra: Drain the okra slightly, then toss the pieces into the cornmeal mixture until every piece is evenly coated.
4. Fry to Golden Perfection: Heat about 1 inch of vegetable oil in a heavy skillet over medium-high heat (365°F / 185°C). Fry the okra in batches for 3–4 minutes, turning occasionally until golden brown and crispy.
5. Drain and Serve: Remove the okra with a slotted spoon and transfer to a wire cooling rack or paper towel-lined plate to drain. Serve warm.
