Traditional South African Amasi Scones

Ingredients

 7 cups cake flour

 7 tsp baking powder

 4 large eggs

 1 ½ cups granulated sugar

 ½ lb (250g) cold unsalted butter, cubed

 1 ½ cups Amasi (or buttermilk / sour milk)

 1 tsp vanilla essence

 A pinch of salt

 1 egg beaten with a splash of milk (for egg wash)

Instructions

1. Preheat and Prep: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it with butter.

2. Combine Dry Ingredients: In an extra-large mixing bowl, sift together the cake flour, baking powder, and a pinch of salt. Stir in the granulated sugar.

3. Rub in the Butter: Add the cold, cubed butter to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs. Avoid overhandling to keep the butter cold, ensuring a flaky texture.

4. Whisk the Wet Ingredients: In a separate bowl, whisk together the 4 eggs, Amasi, and vanilla essence until fully combined.

5. Form the Dough: Make a well in the center of the dry ingredients and pour in the liquid mixture. Use a wooden spoon or a butter knife to gently cut and mix the ingredients together until a soft dough forms. Do not overknead, or the scones will turn out dense.

6. Cut the Scones: Turn the dough out onto a lightly floured surface. Gently press or roll the dough out to a thickness of about 1 inch (2.5 cm). Use a floured round cutter to press straight down into the dough to stamp out your scones.

7. Bake to Golden Perfection: Arrange the scones close together on the prepared baking sheet (just barely touching helps them rise taller). Brush the tops lightly with the egg wash. Bake for 15 to 20 minutes, or until the tops are beautifully golden brown and a toothpick inserted into the center comes out clean. Serve warm with butter, jam, and whipped cream!
