½ cup fresh or frozen raspberries (plus a few extra for topping)
1 tbsp sugar-free vanilla pudding mix (instant)
1-2 tbsp unsweetened almond milk (if needed to smooth it out)
For the topping: 1 low-carb graham cracker or digestive biscuit, crumbled, and a few freeze-dried or fresh raspberries
Instructions
1. Blend the Base: Add the cottage cheese, protein powder, sugar-free instant pudding mix, and raspberries into a high-speed blender or food processor.
2. Whip until Fluffy: Blend on high for 45 to 60 seconds until the mixture is completely smooth, airy, and a gorgeous light pink color. If the mixture is too thick to blend smoothly, add a tiny splash of almond milk, but keep it thick and whipped.
3. Chill to Set: Transfer the whipped mixture into a serving bowl. For the best “fluff” consistency, place it in the refrigerator for 15 to 20 minutes to allow the pudding mix to fully set and create that signature light, mousse-like texture.
4. Garnish and Serve: Just before diving in, top your bowl with the crumbled graham cracker pieces, extra raspberries, and a dusting of graham cracker crumbs to get that authentic cheesecake crust crunch.
