1 large head of green cabbage
3 tbsp olive oil
4 cloves garlic, finely minced
1 cup Parmesan cheese, finely grated
1 cup shredded Mozzarella cheese
1 tsp paprika
1 tsp Italian seasoning
½ tsp red pepper flakes (optional, for a subtle kick)
½ tsp sea salt (or to taste)
¼ tsp black pepper
1 medium lemon, cut into wedges (for serving)
Fresh chives or parsley, finely chopped (for garnish)
Instructions
1. Preheat and Prep: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
2. Slice the Cabbage: Slice off the very bottom stem of the cabbage head. Cut the cabbage vertically into thick, even slices or “steaks” (about ¾-inch thick). Arrange the cabbage slices in a single layer on your prepared baking sheet.
3. Make the Garlic Herb Oil: In a small bowl, whisk together the olive oil, minced garlic, paprika, Italian seasoning, sea salt, and black pepper.
4. Season the Steaks: Brush the garlic herb oil generously over both sides of each cabbage steak.
5. Initial Roast: Roast in the preheated oven for 20 to 25 minutes until the cabbage leaves start to soften and the edges turn a beautiful, crispy golden-brown.
6. Load with Cheese: Carefully slide the baking sheet out. Sprinkle the grated Parmesan cheese evenly over each steak, followed by a blanket of the shredded Mozzarella. Top with a pinch of red pepper flakes if you like a little heat.
7. Melt and Crisp: Return to the oven for an additional 5 to 7 minutes, or until the cheese is completely melted, bubbly, and forms a golden, crispy crust around the edges.
8. Garnish and Serve: Remove from the oven and garnish immediately with a sprinkle of fresh chopped chives or parsley. Serve hot with fresh lemon wedges on the side to squeeze right over the top!
