1 scoop (approx. 30g) chocolate whey or casein protein powder
2 tbsp unsweetened cocoa powder
1-2 tbsp milk (almond, soy, or dairy to help blend)
1 tbsp maple syrup, honey, or your favorite zero-calorie sweetener (to taste)
1 tbsp mini dark chocolate chips (optional, for folding in)
Instructions
1. Blend the Base: Add the cottage cheese, chocolate protein powder, unsweetened cocoa powder, sweetener, and 1 tablespoon of milk into a high-speed blender or food processor.
2. Process Until Silky: Blend on high for 45 to 60 seconds until the mixture is completely smooth, glossy, and aerated. If it’s too thick to blend properly, add one more tablespoon of milk, but keep it as thick as possible to maintain that brownie batter texture.
3. Fold in Textures (Optional): Transfer the smooth mixture into a small glass bowl or dish. If using, fold in the mini dark chocolate chips. Smooth out the top with the back of a spoon to create a beautiful swirl.
4. Chill to Set: Place the dish uncovered or loosely wrapped in the refrigerator for 60 minutes. This allows the protein powder and dairy to bind, changing the texture from a thick cream into a dense, pillowy mousse that mimics real brownie batter.
