Ingredients

 4 cups corn kernels (fresh cut from the cob, frozen, or drained canned corn)

 ¼ cup mayonnaise

 2 tbsp sour cream or Mexican crema

 ½ cup Cotija cheese (or crumbled feta cheese), divided

 ¼ cup fresh cilantro, finely chopped

 1 clove garlic, finely minced

 1 medium lime, juiced (plus extra wedges for serving)

 ½ tsp chili powder or Tajín seasoning (plus extra for sprinkling)

 ¼ tsp salt (or to taste)

Instructions

1. Char the Corn: Heat the butter or vegetable oil in a large skillet (cast iron works best) over medium-high heat. Add the corn kernels in a single layer. Let them cook undisturbed for 2 to 3 minutes until they start to get a nice, smoky char on the bottom. Stir and repeat for another 3 to 5 minutes until beautifully browned. Remove from heat and let cool slightly.

2. Make the Creamy Sauce: In a large mixing bowl, whisk together the mayonnaise, sour cream (or crema), minced garlic, lime juice, chili powder (or Tajín), and salt until perfectly smooth.

3. Mix It Together: Add the warm charred corn to the mixing bowl with the sauce. Toss in the finely chopped cilantro and half of the crumbled Cotija cheese. Stir everything thoroughly until the corn is completely coated in the creamy, savory dressing.
