Flourless High-Protein Crepe Pancakes

Ingredients

 2 large eggs

 1/2 cup low-fat cottage cheese (or plain Greek yogurt)

 1 scoop (approx. 30g) vanilla whey or casein protein powder

 2-3 tbsp unsweetened almond milk (or milk of choice, to thin the batter)

 1 tsp vanilla extract

 1/2 tsp baking powder

 A pinch of salt

 For the dipping custard cream (shown in background): 1/2 cup vanila protein yogurt or Greek yogurt mixed with 1 tbsp maple syrup or honey and a splash of milk until smooth and pourable.

Instructions

1. Blend the Batter: In a high-speed blender, combine the eggs, cottage cheese, vanilla protein powder, vanilla extract, baking powder, a pinch of salt, and 2 tablespoons of almond milk. Blend on high for 30 to 45 seconds until perfectly smooth, frothy, and completely free of cottage cheese lumps. If the batter is too thick to pour thinly, add one more tablespoon of milk.

2. Heat the Skillet: Heat a large non-stick skillet or crepe pan over medium heat. Lightly coat the surface with cooking spray or a tiny dab of melted butter.

3. Cook Thinly: Pour about 1/4 cup of the batter into the center of the hot skillet. Immediately swirl the pan in a circular motion to spread the batter out into a thin, even circle (similar to a crepe).

4. Flip gently: Cook for 1.5 to 2 minutes. You’ll know it’s ready to flip when the edges look dry and lift easily, and tiny bubbles form on top. Carefully slide a spatula underneath and flip, cooking the second side for another 45 to 60 seconds until lightly golden.

5. Roll and Arrange: Transfer the thin pancakes to a plate and immediately roll them up gently while they are still warm. Repeat with the remaining batter.

6. Serve with Custard: Whip up the quick dipping custard by stirring your yogurt and sweetener together until smooth. Serve the rolled pancakes warm with the creamy custard pooled alongside or drizzled right over the top!
