Ingredients
6 bell peppers, halved lengthwise and seeds/ribs removed
1 lb ground beef
1 packet Knorr Taco Rice mix
1 can (10 oz) Rotel Original diced tomatoes with green chiles
1 ½ cups water (for the rice)
1 cup shredded Mexican style blend cheese
Fresh cilantro, chopped (for garnish)
Instructions
1. Preheat and Prep: Preheat your oven to 375°F (190°C). Arrange the halved bell peppers open-side up in a large 9×13-inch baking dish. Pour 2 to 3 tablespoons of water into the bottom of the dish to help the peppers steam evenly while baking.
2. Brown the Beef: Heat a large skillet over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook for 5 to 6 minutes until entirely browned and no longer pink. Drain off any excess grease.
3. Cook the Taco Rice: To the same skillet with the browned beef, stir in the Knorr Taco Rice mix, the undrained can of Rotel diced tomatoes, and 1 ½ cups of water. Bring the mixture to a boil, then reduce the heat to low. Cover with a tight-fitting lid and simmer for 7 minutes (or according to the rice packet instructions) until the rice is tender and the liquid is absorbed.
4. Stuff the Peppers: Remove the rice and beef mixture from the heat. Spoon the filling generously into each of the prepared bell pepper halves, pressing down gently to pack them full.
5. Bake: Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 30 to 35 minutes until the bell peppers are tender.
6. Melt the Cheese: Carefully remove the foil and blanket the top of each stuffed pepper with a generous sprinkle of the shredded Mexican style blend cheese. Return to the oven uncovered for an additional 5 minutes, or until the cheese is completely melted, bubbly, and slightly golden.
7. Garnish and Serve: Garnish with fresh chopped cilantro and serve hot.
